Your data is only stored in Stardog's servers if you're using an endpoint provisioned by Stardog (i.e., a Free, Essentials, or Enterprise instance). You can find a diagram of the architecture here.
If you're connecting to a private endpoint (either on your company's servers, a virtual machine, or your own personal machine) through Stardog Cloud, your data is not stored in Stardog's servers.
Stardog Cloud sends the Stardog applications (Studio, Explorer, and Designer) to your browser (they're single-page applications). Your data is stored on the machine where your endpoint lives, and is only transmitted between that machine and your local machine. (This means if your endpoint is running on localhost, your data will never leave your machine.)
